Zucchini Ribbons

ingredients

2 medium or 1 large zucchini, ends trimmed, unpeeled

2 tsp. olive oil

3 garlic cloves, minced

1 cup halved cherry tomatoes

1/2 tsp. dried basil

Salt and pepper to taste

Cooking time: 11 minutes

1. With a vegetable peeler, peel off long, thin lengthwise strips of zucchini.

2. Heat the oil in a large skillet over medium heat. Add the zucchini ribbons and sauté for  4 minutes. Add the garlic and sauté for 2 minutes.

3. Add the cherry tomatoes and sauté for 2 minutes. Sprinkle with basil and salt and pepper to taste, and cook for 1 minute.
