Whole Wheat Cheddar Bread Sticks

ingredients

1 packet dry yeast (1/4 oz.)
1 cup warm water (110°F to 115°F)
1 Tbsp. honey
1/2 tsp. salt
1 cup whole wheat flour
3/4 cup grated reduced-fat
    extra sharp cheddar cheese
1 1/2 cups all-purpose flour
Cooking spray
 
1 large egg, beaten
1 tsp. water

1. In a large pan or bowl, sprinkle the yeast over 1/4 cup of the warm water, and set aside for 5 minutes. When the yeast froths, add the remaining water, honey, salt, whole wheat flour, and cheese, mixing well after each addition. Add in half of the all-purpose flour to form a stiff dough. Add more of the flour if necessary.
2. Turn the dough out onto a lightly floured surface. Using the remaining all-purpose flour, knead the dough until it is no longer sticky, incorporating as much flour as necessary. Knead the dough for 5 to 10 minutes until smooth and elastic. Place the dough in a large bowl coated with cooking spray, and turn to coat. Cover with a clean towel, and set aside to rise in a warm place for about an hour, or until it has doubled in size.
3. Punch down the dough, and turn it out onto a lightly floured surface. Divide the dough into 12 pieces (about 2 oz. each). Roll into 6-inch-long bread sticks. Place onto a baking sheet coated with cooking spray. Cover with a clean towel. Set aside to rise in a warm place for 30 minutes.
4. Preheat the oven to 425°F. In a small bowl, whisk together the egg and water. Using a pastry brush, brush the egg mixture lightly over each bread stick. Sprinkle with sesame seeds. Bake for 15 to 20 minutes, until the sticks are browned and crisp. Transfer to a wire rack to cool, or serve immediately.

Whole Wheat breadsticks

My 90 year old diabetic mother asked me to make the breadsticks with her Thanksgiving meal. She's 90 and gets what she wants! They were easy to make and tasted delicious. I am making more today.

21g of Carb per serving?

Are these recipes designed to make matters worse for diabetics? Because that is just what they are doing at 21g per serving. Carbs are a diabetics worst enemy. Shame on you!
