White Chocolate Pudding
ingredients
3½ Tbsp. cornstarch
¼ tsp. salt
8 packets Truvia natural sweetener
2½ cups fat-free milk, heated but not brought to a boil
1 oz. (2 squares) premium white chocolate baking bar (such as Ghirardelli), melted
1 tsp. vanilla

Makes 5 servings
Serving size: ½ cup
Preparation time: 10 minutes
Cooking time: 13 to 14 minutes
Cooling time: 1 hour
1. In a heavy saucepan, combine the cornstarch, salt, and Truvia. Very gradually whisk in the heated milk, stirring constantly over medium heat until the mixture thickens, about 3 minutes (it should coat a spoon). Be sure to stir frequently so that the milk does not scorch. Turn the heat to low, and cook for 10 minutes, stirring constantly.
2. Remove from the heat, and whisk in the chocolate and vanilla. Pour the pudding into a medium bowl, and cover with plastic wrap placed directly on top of the pudding so that a skin does not form. Refrigerate for about 1 hour.
