Spinach Orange Salad

5 cups torn fresh spinach leaves, washed and dried
1/2 cup mandarin oranges, packed in their own juice, drained
1/2 cup thinly sliced dried apricots
1 small red onion, sliced
1 Tbsp. toasted pine nuts
Dressing
2 Tbsp. canola oil
3 Tbsp. orange juice
2 tsp. to 1 Tbsp lemon juice
1 tsp. grated orange zest

1. Whisk all the dressing ingredients together.
2. Combine the salad ingredients together. Toss with dressing. Serve.
