Spicy Prosciutto Shrimp

ingredients

Marinade
¼ cup fresh lemon juice
¼ cup reduced-sodium soy sauce
3 Tbsp. rice wine (mirin)
1 Tbsp. grated fresh ginger
3 scallions, minced
1½ tsp. toasted sesame oil
 
32 medium shrimp, peeled and deveined
16 wooden skewers
2 oz. prosciutto, cut into 32 thin strips

Cooking time: 3 to 4 minute

1. In a bowl, combine the marinade ingredients, and add the shrimp. Cover and marinate in the refrigerator for 1 to 2 hours.
2. Put the wooden skewers in a pan of warm water, and soak for an hour.
3. Preheat the oven broiler. Prepare a broiler tray lined with foil. Coat the foil with cooking spray.
4. Drain the shrimp from the marinade, and discard the marinade. Wrap a slice of prosciutto around each shrimp. Thread 4 shrimp onto a pair of skewers to keep the shrimp stabilized as they cook. Broil for 1 to 2 minutes per side. Serve hot or at room temperature.
