Spicy Grilled French Fries

ingredients

2 large Yukon gold potatoes, unpeeled and washed

1 1/2 Tbsp. olive oil

1 tsp. chili powder

1/2 tsp. cumin

1/4 tsp. garlic powder

Salt and pepper to taste

1. Bring a pot of water to a boil in a medium saucepan. Add the potatoes and cook until almost tender but still a little firm.

2. Drain and cut the potatoes lengthwise into quarters. Toss the potatoes with the oil, chili powder, cumin, garlic powder, and salt and pepper to taste.

3. Heat a grill rack 6 inches from the heat source. Coat a vegetable basket with cooking spray and place the potatoes in the basket. Cook for about 3 minutes per side until crusty and brown. Alternatively, carefully place the potatoes across the rack (to prevent them from falling through) and turn each piece carefully with long-handled tongs, about 3 minutes per side until crusty and brown.
