Sautéed Grape Tomatoes

1 Tbsp. olive oil
2 large shallots, thinly sliced
(about 1 cup)
6 cups grape tomatoes
(about 3 pints)
1/2 cup chopped fresh basil
2 Tbsp. minced fresh thyme
1/2 tsp. kosher salt
1/4 tsp. ground black pepper
1 Tbsp. fresh lemon juice

Preparation Time: 15 minutes
Cooking Time: 10 minutes
1. In a large skillet, heat the olive oil over medium heat. Add the shallots and sauté for 5 to 6 minutes, until they are very soft.
2. Add the tomatoes and cook for 5 to 8 minutes, just until they begin to burst.
3. Remove the skillet from the heat and add the basil, thyme, salt, and black pepper. Drizzle with lemon juice and serve.
