Roasted Vegetables
ingredients
Cooking spray
1 lb. asparagus, cut into 1-inch pieces
2 zucchini, diced
1 medium eggplant (about 1 lb.), diced
1½ Tbsp. olive oil
1 tsp. garlic powder
¼ tsp. ground black pepper
preparation
Serves 8
Serving size: ½ cup
1. Preheat oven to 375 degrees Fahrenheit. Coat a large baking dish with cooking spray.
2. In a large bowl, mix together all ingredients. Spread mixture evenly in baking dish.
3. Bake 40 to 45 minutes or until brown and roasted.
