Roast Beef With Creamy Horseradish Sauce
ingredients
Roast Beef
1½ Tbsp. cracked black pepper
2 tsp. kosher salt
5 garlic cloves, finely minced
1 (3-lb.) sirloin tip roast or bottom round roast, all excess fat removed (leave at room temperature for 15 minutes before roasting)
Creamy Horseradish Sauce
2 cups nonfat sour cream
½ cup peeled, grated fresh horseradish or prepared horseradish
¼ cup coarse Dijon mustard

Preparation time: 10 minutes
Cooking time: 1 hour, 10 minutes
Standing time: 20 minutes
1. Preheat the oven to 450°F. Combine the black pepper, salt, and garlic, and rub all over the roast. Place the meat in a large roasting pan. Roast the meat for about 20 minutes.
2. Reduce the heat to 325°F, and bake for about 50 additional minutes or until a meat thermometer inserted in the roast registers 140°F for medium rare. Cook longer if desired.
3. Remove the roast from the oven. Cover loosely with foil, and let stand for 15 to 20 minutes. Cut the meat across the grain into thin slices.
4. Combine the ingredients for the horseradish sauce, and serve with the sliced beef.

I find it hard to believe the meat will be the rosy pink of the photo after cooking to 140F and standing for 20 minutes!!

When cooked in the manner that the directions suggest, the roast will be rosy pink as shown. If it is too rare for you cook to 145 d. internal. That particular cut of meat is a sirloin tip roast,or peeled knuckle. It is lean and quite large whole, about 6-8 lbs maybe more. It is thick and that is why it retains cooks evenly by this method. We use a similar method in the meat industry called Delta T cook cycles for preparing large inside rounds about 20 lbs and cooking them rare to medium rare for deli's. This method will work.
