Mustard-Glazed Pork Loin Roast
ingredients
2 4-lb. boneless pork loin roasts, trimmed of fat
Salt and pepper to taste
1/2 cup Dijon mustard
1/4 cup fresh orange juice
2 Tbsp. honey
2 tsp. grated orange zest
1/2 tsp. ground cinnamon
1/4 tsp. ground allspice

Preparation time: 15 minutes
Cooking time: 30 to 40 minutes
1. Preheat the oven to 400°F.
2. Sprinkle the pork with salt and pepper. Place it on two racks in two shallow roasting pans. Roast for about 1 hour.
3. Combine remaining ingredients. Brush the glaze over the pork roasts and continue to roast for another 30 to 40 minutes. Remove from the oven and allow the pork to stand for 10 minutes before serving.
