Mexican Tuna Salad
ingredients
1 12-oz. flavor-fresh tuna pouch, in water
1/4 cup light mayonnaise
3 Tbsp. nonfat plain yogurt
1/4 cup onion, finely diced
1 large tomato, seeded and finely diced
1 jalapeño pepper, seeded and diced
1/3 cup fresh cilantro, chopped
1/4 tsp. ground black pepper
6 whole-wheat pita pocket halves
preparation
1. In a medium mixing bowl, combine all ingredients except pita pocket halves.
2. Fill each pocket half with 1/6 of tuna mixture. Repeat process for remaining five pockets.
