Marinated Chicken Kabobs
ingredients
4 tsp. fresh lemon juice
1/2 tsp. cayenne pepper
Fresh ground pepper
1 (1-inch) piece fresh ginger, peeled and minced
1 tsp. curry powder
4 tsp. olive oil
2 whole boneless, skinless chicken breasts, halved, cut into 1/4-inch strips
preparation
1. In a medium bowl, combine all ingredients except the chicken. Add the chicken and let marinate overnight in the refrigerator.
2. Thread the chicken onto metal or wooden skewers (remember to soak the wooden skewers in water before using).
3. Grill over medium heat until chicken is no longer pink, about 15 minutes. Transfer to a platter and serve.
