Luscious Limas

ingredients

1 10-oz. package frozen baby lima beans

1 cup frozen mixed pepper and onion stir-fry

2 Tbsp. grated Parmesan cheese

1 tsp. olive oil

1/8 tsp. salt (optional)

preparation

1. In a medium saucepan over high heat, combine the lima beans, vegetables, and 3/4 cup boiling water. Return to a boil. Cover, lower the heat, and simmer for 12 to 14 minutes or until the beans are tender. Drain in a colander.

2. Transfer the bean mixture to a medium bowl. Stir in the cheese, oil, salt (if desired), and stir-fry mixture. Serve at once.

3. The beans will keep in the refrigerator for 3 to 4 days.
