Lamb Chops with Glazed Apples
ingredients
4 lamb loin chops (4 oz. each, with bone), trimmed of fat
1 tsp. light soft tub margarine
2 medium Granny Smith or other apples, unpeeled and cut into wedges
1 1/2 Tbsp. brown sugar (or 1 1/2 tsp. brown sugar substitute)
1 Tbsp. water
Salt to taste
1/2 tsp. cinnamon
1/4 tsp. cloves

Preparation time: 10 minutes
Cook time: 20 minutes
1. Spray a large skillet with cooking spray. Sauté the lamb chops on each side for a total of 10 minutes. Remove the lamb from the skillet.
2. Add the margarine to the pan drippings and sauté the apples for about 5-6 minutes. Add the brown sugar, water, salt, cinnamon, and cloves. Heat until the brown sugar melts, about 2 minutes. Arrange apple mixture around the cooked lamb.
