1 (7‑oz.) jar roasted red peppers, drained and diced

1/4 cup diced red onion

1/4 cup minced sundried tomatoes

4 cups bagged salad greens

 

Dressing

2 Tbsp. balsamic vinegar

2 Tbsp. olive oil

1 tsp. lemon juice

1/2 tsp. minced bottled garlic

1/4 tsp. dried thyme

1/4 tsp. dried rosemary, crumbled

1/4 tsp. salt

1/4 tsp. freshly ground black pepper

1. In a large bowl, combine the black beans, roasted red peppers, red onion, and sundried tomatoes.

2. In a measuring cup, whisk together the dressing ingredients. Pour over the black beans; toss well. Serve over salad greens.
