Grilled Tilapia with Tangerine Watercress Salad
ingredients
1 tsp. ground cumin
1/2 tsp. paprika
1/4 tsp. cayenne pepper
Salt and pepper to taste
4 4-oz. tilapia filets
1 Tbsp. olive oil
Salad
2 tangerines, peeled and sliced into rings
2 cups watercress or arugula, washed and dried
1/2 cup peeled, shredded raw beets
2 tsp. tangerine zest
2 tsp. olive oil
Salt and pepper to taste

Preparation time: 20 minutes, for both salad and fish
Cooking time: 8 minutes
1. Heat an outdoor grill with the rack set 6 inches from the heat source. Coat the rack with cooking spray. Heat the grill to medium high.
2. Combine the cumin, paprika, and cayenne pepper and add salt and pepper to taste. Rub the mixture over the tilapia filets. Drizzle the filets with olive oil. Place the tilapia to the grill and cook for 4 minutes per side, turning carefully so filets do not break.
3. Combine all salad ingredients. Serve the tilapia with salad on the side.
