Grilled Scallions

32 scallions
1/4 cup olive oil
2 tsp. lemon juice
2 garlic cloves, minced
Salt and pepper to taste

1. Prepare an outdoor grill. Coat the rack with cooking spray and set it 6 inches from the heat. Trim the scallions by cutting off and discarding the root end about 1 inch off the tops, leaving about 2 inches of green. Combine the olive oil, lemon juice, garlic, salt, and pepper in a shallow dish.
2. Coat the scallions with the olive oil mixture and let stand for about 5 minutes.
3. Remove the scallions from the marinade and place them diagonally across the grill rack. Using long-handled tongs, turn the scallions so that all sides are grilled, basting with any remaining marinade. Grill the scallions for about 3 to 5 minutes total.
