Grilled Romaine and Radicchio Salad with Balsamic Syrup

ingredients

1 Tbsp. olive oil

1 small head radicchio, cut into 4 wedges

1 small head romaine lettuce, outer leaves removed, cut in half and rinsed through

Salt and pepper to taste

2 small red tomatoes, cut into large chunks

1/2 cup balsamic vinegar

Cooking time: 6 minutes

1. Heat a grill rack coated with cooking spray to medium. Brush the radicchio wedges and romaine halves with olive oil and sprinkle with salt and pepper to taste.

2. Carefully lay the lettuces on the rack and grill for a total of 6 minutes, turning once carefully with tongs.

3. Remove the lettuces to a cutting bard and chop coarsely. Place chopped lettuces in a salad bowl, add tomatoes, and toss.

4. In a small saucepan, boil the balsamic vinegar until reduced by half. Drizzle the balsamic syrup over the lettuces and tomatoes and serve.
