Ginger Hoisin Salmon
ingredients
4 (4 oz.) salmon filets
Marinade
1 cup low-fat, reduced-sodium chicken broth
2 Tbsp. reduced-sodium soy sauce
2 Tbsp. hoisin sauce
2 tsp. Dijon mustard
2 tsp. peeled, grated fresh ginger
2 garlic cloves, minced
1 tsp. sesame oil
3 scallions, minced

Marinating time: 1 hour
Cooking time: 8 to 10 minutes
1. In a large bowl, combine all the marinade ingredients, and add the salmon. Cover and let marinate in the refrigerator for 15 minutes up to 1 hour.
2. Remove the salmon from the marinade; discard the marinade. Preheat the oven broiler to high.
3. Place the salmon filets on a foil-lined broiler tray that has been coated with cooking spray. Broil the salmon 4 inches from the heat source for about 8 to 10 minutes depending on desired doneness.
