Garlicky Mushrooms
ingredients
3 Tbsp. olive oil
1 lb. mushrooms, stems trimmed, tops cleaned (peeled if necessary), mushrooms left whole
8 cloves garlic, peeled and thinly sliced
4 tsp. lemon juice
3/4 cup low-fat, reduced-sodium beef broth
1 tsp. paprika
1/2 tsp. crushed red pepper
Salt and pepper to taste
2 Tbsp. minced parsley

Cooking time: 4 minute
1. Heat the oil in a skillet until hot, and stir fry the mushrooms and garlic constantly over high heat for about 2 minutes. Do not add more oil even if the pan looks dry; the mushrooms will begin to release their own juices after a short while.
2. Lower the heat and stir in the lemon juice, broth, paprika, crushed pepper, salt, and pepper. Simmer a minute or two. Sprinkle with parsley. To serve, spear with toothpicks. Sop up the sauce with whole-wheat rolls if desired (not included in nutritional analysis).
