Curried Nuts

4 cups mixed whole almonds and pecans

1 egg white

2 Tbsp. curry powder

1 tsp. cumin

1. Preheat the oven to 300° F. Spread the nuts in a single layer on a baking sheet and roast for 10 minutes. Remove the nuts from the oven.

2. Line a baking sheet with foil and coat with cooking spray. Whisk the egg white until frothy. Add in the nuts, curry powder, cumin, salt, and pepper. Toss well and spread onto the baking sheet. Return to the oven and bake another 15 minutes until well-browned.

3. Break nuts apart and store them in an airtight container.
