Curried Grouper Steaks

ingredients

4 grouper steaks

2 Tbsp. canola oil

1/4 tsp. salt

1 Tbsp. garlic powder

1/2 tsp. pepper

1 cup sliced unpeeled apples

4 Tbsp. curry powder

1 cup orange juice

1 cup flour

preparation

1. Season the fish with salt and pepper. In a mixing bowl, combine 2 Tbsp. curry powder and the flour. Dredge the grouper in the flour and shake off any excess.

2. Heat the oil in a large frying pan; then add the fish and cook for 3 to 4 minutes over high heat. Turn each steak and cook for 2 more minutes. Remove the fish and place on a serving plate.

3. To the skillet, add the garlic powder, apples, orange juice, and remaining 2 Tbsp. curry powder. Simmer until liquid is reduced. Pour the sauce over the fish and serve.
