Curried Chicken Salad with Granny Smith Apples
ingredients
12 oz. cooked, diced white meat chicken (such as Perdue)
1/2 small onion, minced
2 celery stalks, diced
1 large Granny Smith Apple, unpeeled and cubed into 1/2 inch pieces
2 Tbsp. raisins or currants
2 Tbsp. sliced toasted almonds
Dressing
1/3 cup non fat mayonnaise
1/4 cup non fat sour cream
1 tsp. curry powder
1 tsp. lemon juice
Salt and pepper to taste

Preparation time: 25 minutes
1. In a large bowl, combine the chicken, onion, celery, apple and raisins or currants and almonds.
2. Whisk together the dressing ingredients and pour over the chicken and toss well. Serve with whole grain crackers.
