Chilled Strawberry Apricot Soup

2 cups strawberries, washed and hulled
1 cup ripe fresh apricots, cubed
1 cup sugar-free, fat-free vanilla yogurt
2 Tbsp. sugar
2 tsp. lemon juice
2 tsp. fresh minced mint
1/4 tsp. cinnamon

Preparation time: 15 minutes
In a food processor or blender, combine the fruit. Process until smooth. Transfer to a bowl and fold in the remaining ingredients. Cover and refrigerate for 4 hours before serving.
