Brown Rice Deluxe

ingredients

1 cup whole-grain brown rice

1 cup shelled edamame (green soybeans)

1 onion, chopped

1 red bell pepper, chopped

1/2 cup chopped green onions

3 Tbsp. coarsely chopped walnuts, toasted

Salt and pepper to taste (optional)

preparation

1. In separate saucepots, cook the rice and the edamame according to package directions, omitting any oil and salt.

2. In a large nonstick skillet coated with nonstick cooking spray, sauté the onions, red pepper, and green onions over medium heat for 5 minutes or until tender.

3. Combine all ingredients in a serving bowl.
