Broiled Tuna with Roasted Red Pepper and Oregano Sauce

ingredients

1 1/2 lb. tuna steaks

Salt and pepper to taste

4 Tbsp. fresh lemon juice, divided

1/3 cup of jarred diced, roasted red peppers

1/4 cup minced scallions

1 1/2 Tbsp. fresh minced oregano

1 Tbsp. minced fresh parsley

1/4 cup balsamic vinegar

2 1/2 Tbsp. olive oil

Cook time: about 10 minutes

1. Preheat an oven broiler. Place the tuna steaks in a glass cooking dish. Sprinkle with salt and pepper. Drizzle with 2 Tbsp. of the lemon juice and set aside.

2. Meanwhile, combine remaining lemon juice with the other ingredients in a medium sauce pan. Bring to a boil, lower the heat, and simmer for 5 minutes.

3. Place the tuna steaks on a foil lined broiler pan. Broil the tuna for about 4 to 5 minutes per side until desired doneness. Serve with the sauce on the side.
