1 small red onion, finely diced

1/4 cup minced cilantro]

Dressing

1/2 cup rice vinegar

1 Tbsp. light soy sauce

1 Tbsp. dry sherry (optional)

2 tsp. sesame oil

2 garlic cloves, minced

1/4 tsp. crushed red pepper
