Asian Barbecue Grilling Sauce
ingredients
2 tsp. peanut oil
2 Tbsp. peeled, grated ginger
3 garlic cloves, minced
1 serrano pepper, chopped (optional)
1 medium red onion, chopped
2 cups fresh seeded, diced tomatoes
1/4 cup rice vinegar
1/4 cup light soy sauce
1 Tbsp. brown sugar (or brown sugar substitute)
1 Tbsp. honey
Salt and pepper to taste

Cooking time: 14 minutes
1. Heat the oil in a saucepan over medium heat. Add the ginger, garlic, serrano pepper, and red onion and sauté for 7 minutes until onions are very soft.
2. Add the tomatoes and cook for 2 minutes. Add the rice vinegar, soy sauce, brown sugar, and honey and cook for 5 minutes. Remove the contents of the pan to a blender or food processor or keep in the saucepan and use an immersion blender. Blend the sauce until smooth and correct the seasoning with salt and pepper to taste. Brush over grilled foods.
