Artichoke Toast Slices

ingredients

1 (16-oz.) loaf Italian bread or whole wheat bread
2/3 cup fat-free sour cream
½ tsp. minced garlic
1 (14-oz.) can quartered artichoke hearts, drained and coarsely chopped
2/3 cup shredded, reduced-fat Monterey Jack cheese
½ cup chopped green onions
Dash hot pepper sauce
Salt and pepper to taste (optional)
2Tbsp. grated Parmesan cheese

Serving size: 1 slice

1. Preheat the oven to 350°F.
2. Slice the bread in half lengthwise. Carefully scoop out the bread in the center with your fingers and cut it into small chunks. Toast 2 cups of the chunks in the oven for 5 to 7 minutes until light brown, then let cool.
3. In a medium bowl, combine all ingredients except the Parmesan cheese. Fold in the toasted bread. Spoon the mixture into the bread shells.
4. Sprinkle each bread half with Parmesan cheese and bake for 18 to 20 minutes or until the cheese is melted. Cut into slices to serve.
