Arroz con Pollo
ingredients
1 Tbsp. olive oil
1 lb. boneless, skinless chicken breasts
Salt to taste
1 tsp. ground black pepper
1/2 lb. reduced fat turkey sausage links
1 medium-sized onion, chopped
1 medium-sized red pepper, diced
4 cloves garlic minced
1 tsp. cumin
1/4 tsp. paprika
1/4 tsp. chili powder
1/2 tsp. ground turmeric
1/2 cup crushed tomatoes
1/2 cup reduced sodium, low fat chicken broth
1 bay leaf
2 cups rice
3 cups water

Cook time: 45 minutes
1. In a deep pot, heat the oil on medium high. Sprinkle chicken with salt and pepper. Sauté chicken in batches until golden on all sides about 7 to 10 minutes. Transfer the chicken to a platter. Sauté the sausage until browned, about 3 minutes. Transfer the sausage to the platter.
2. Reduce the heat to medium and sauté the onions, peppers, and garlic for 5 minutes. Return the chicken and sausage to the pot and add the cumin, paprika, chili powder, and turmeric. Cook for 1 minute then add the tomatoes, broth, and bay leaf.
3. Increase the heat to medium high and cook for 2 minutes. Add the rice and water. Bring to a boil, cover, and reduce the heat to simmer. Cook for 25 minutes until rice is tender.
4. For serving, slice the sausages into pieces if desired.
