Apple Cake with Lemon Thyme
ingredients
1 tart large apple (e.g. Granny Smith), about
1 1/2 cups, cubed and peeled
4 Tbsp. finely chopped, fresh thyme leaves (try to use lemon thyme if you can find it)
1 Tbsp. fresh lemon juice
2 cups unbleached all-purpose flour
3/4 cup Splenda
1 1/2 tsp. baking powder
3/4 tsp. baking soda
3/4 tsp. cinnamon
1/2 tsp. nutmeg
1/8 tsp. salt
2 eggs, lightly beaten
1/3 cup canola oil
1/4 cup orange juice
1 tsp. vanilla
preparation
1. Preheat the oven to 350°F. Lightly coat with nonstick spray and flour an 8- × 8-inch square pan. Combine the apples, thyme, and lemon juice, and set aside.
2. Combine the flour, Splenda, baking powder, baking soda, cinnamon, nutmeg, and salt in a separate bowl. In a large bowl combine the eggs, oil, orange juice, and vanilla.
3. Add the apple-thyme mixture and mix until blended. Add dry ingredients, stirring until just combined. Spoon batter into prepared pan and bake for 30 minutes. Allow to cool and serve.
