Fresh Garlic Versus Garlic Powder

You may have heard garlic is good for you, but does garlic powder pack the same health punch as the fresh stuff? To find out, researchers fed rats a steady diet of either fresh or dried garlic and checked their hearts. While both garlic-eating groups were healthier than rats on a no-garlic diet, fresh garlic protected the rats’ hearts from damage better than dried garlic did. As garlic dries out, it loses the sulfurous chemical that gives the cloves their pungent aroma. And, this study suggests, that substance may also make fresh garlic healthier.
