When you think about it, chicken has quite a lot going for it. It’s versatile, full of protein, and if you take off that skin, it’s fairly low in fat, too. At this time of year, there’s another thing to chalk up in its favor: As a break from greasy roasts and salty hams, chicken makes for simple eating in a season of excess.
