They’re among the most simple lunches, and the most portable. But sandwiches can pose a problem for people with diabetes, given the carbohydrate content of bread—to say nothing of the tendency to go heavy on the fat with meats, cheeses, and mayo. This month, we’ve taken a close look at some great ways to make healthy sandwiches that allow you to dine in style—even if you’re just lunching at your desk.

1. Bread

Slice It. First step: Dump the white bread. It’s not doing you any favors. Luckily, there’s a plethora of delicious whole-grain options available today: whole wheat, seven- or nine-grain, oatmeal bread, whole rye, spelt, and many others. And those are just the traditional slices. There’s also Indian whole wheat chapati and naan, Mexican whole-grain or corn tortillas, whole wheat English muffins, and Middle Eastern whole wheat pita bread. Another option: low-carb breads, some of which are better than others, so you may want to taste test.

Since whole-grain breads can turn rancid faster than their white-flour counterparts, use whole-grain bread up quickly if you are going to leave it on the kitchen counter. Otherwise, keep it in the fridge, or store it tightly wrapped in a heavy plastic bag in the freezer for up to three months.

Low Carb Tortillas

There are several brands of very tasty, high fiber whole wheat and white low carb tortillas. These are very satisfying, unlike regular bread cut in half to be labeled "low carb". These are a lifesaver for me.

Gluten

Can you please add some foods for us to prepare when we have diabetices, egg and gluten allergies? I'm going wild not being to find much that meets these issues!!!

whole wheat wraps!!!

Hello there my name is Chris, I have diabetes type two,so I'm working out every day now and also doing a pretty serious low carb/low fat diet, so I love the whole wheat wraps but I found out that some of these wheat wraps have 300 to 400 calories each, which is the same for a typical spinash wrap, so I turned to whole wheat roll- ups, which are only 100 calories each!!! A very significant amount if you consider, especially if you are on a diet!!!. Remember not all whole wheat products are suppose to be good for you, always make sure the ingredients they are made from says "whole wheat flour" and not bleach flour!

Get a Clue

Don't worry about the fat.
Look at the carbs in most of that bread you are recommending.
Corn tortillas? ARE YOU KIDDING?!? Read the label. Carbs per serving.

Better off skipping the bread all together. That stuff is not good for diabetics.

in the summer, when I'm out of tomatoes, I use a slice of watermelon instead! It's really delicious!

bake your own breads

baking my own breads has allowed me to choose what my diet consists of! it's fun, it's easy, if you can read a recipe and follow along then so can you! Bread machines are really helpful. I love being able to know and control what goes into my breads. Baking is one skill that has given me the peace of mind to know that there are no allergens or unwanted substances in my food! Plus it always impresses others ;)

I love using hummus as a spread instead of mayo, oh and recently I've discovered cranberry mustard!
